- A root vegetable that grows in temparate regions. Typically reddish purple exterior with a moist firm crips white flesh. The tops often have leaves that are similar to that of a carrots. They are globe-shaped and have a mild flavour to them. They can be en eaten raw and alone or in salads with a oil-based vinegrette.
